Pumpkin Soup

Amount Ingredient
1 c Onion - diced
5 c Chicken broth
2 1/2 c Canned pumpkin
2 c Light Cream
  Salt and pepper to taste
  Nutmeg to taste
  Cayenne pepper to taste
  Fresh chives - chopped- for garnish

  • Cook the diced onion with chicken broth in a stockpot for about 10 minutes.
  • Add the pumpkin and seasonings.
  • Using a handblender or a food processor, blend the mixture until smooth.
  • Return to heat and add cream. Heat through, but do not allow to boil.
  • Taste and adjust seasonings.
  • Before serving, add fresh chives for garnish.
This soup can be made a day in advanced. When making ahead of time, I prefer to add the cream and heat the day of serving.
