Peanut Sauce Cold Noodles

Amount Ingredient
1 lb white noodles (any kind you prefer)
2 ea boneless, skinless chicken breasts
1 ea cucumber, peeled and julienned
1 package bean sprouts
1/4 c cilantro
Peanut Sauce
1/2 c peanut butter
1/4 c soy sauce
1/3 c warm water
2 cloves garlic
2 tablespoons red wine vinegar
1 1/2 tablespoon sesame oil
2 teaspoons honey
1 teaspoon red pepper flakes (optional)

  • Prepare the white noodles according to the package directions and set aside.
  • Poach the chicken breasts. Once cooked, cool the chicken. Shred the cooled chicken with your fingers into julienne-like strips.
  • Cook the bean sprouts in boiling water for 30 seconds.
  • In a small food processor or blender, process all peanut sauce ingredients until smooth.
  • Combine sauce, chicken, noodles, cucumber, sprouts and cilantro. Toss to combine well.
  • Noodles are best served at room temperature or cold.
