Butterscotch Yams

Amount Ingredient
6 ea yams, medium sized, peeled, quarters and cooked
1/2 c light or dark corn syrup
1/2 c brown sugar, firmly packed
1/4 c heavy whipping cream
2 tablespoons butter
1/2 teaspoon cinnamon

  • Preheat oven to 325°F.
  • Place yams in 13 x 9 x 2-inch baking dish. Bake for 15 minutes
  • In a small saucepan, combine corn syrup, brown sugar, cream, butter and cinnamon.
  • Stirring constantly, bring to a boil over medium-high heat and boil for 5 minutes.
  • Pour sauce over yams.
  • Bake yams an additional 15 minutes, basting frequently.
